Deliciously Ella kale pomegranate and avocado saladIt is hard to imagine a salad that is more beneficial for face health! Deliciously Ella’s recipe for kale, pomegranate and avocado salad is packed full of ingredients that will benefit your face (as well as the rest of your body!)

Kale is a good source of beta-carotene (which converts to vitamin A) which is necessary for the growth and maintenance of all body tissues, including the skin and hair. A cup of cooked kale provides 23% of the daily requirement for vitamin C which the body uses to build and maintain collagen, a protein that provides structure for skin, hair, and bones.

Antioxidants such as the vitamin C found in pomegranates work by reducing cellular damage in your body. The antioxidants in pomegranate are also thought to help provide natural protection against ultraviolet (UV) rays, according to some studies. Though this doesn’t mean you can skip your sunscreen!!

Avocados are always a winner for the skin. They contain healthy fat which has hydrating properties that may reduce fine lines and wrinkles, help keep skin smooth and boost skin’s immunity against stress and other environmental factors. Antioxidants such as vitamins E and C help protect cells from free radical damage and avocados also contain lutein, a carotenoid that promotes skin elasticity. So all in all, a pretty good cocktail for youthful looking skin!

INGREDIENTS (Serves one)
Four big handfuls of kale
125g pomegranate seeds
1 ripe avocado, peeled and roughly chopped
Handful of pumpkin seeds
For the dressing
1 tablespoon olive oil
1 tablespoon tahini
1 teaspoon apple cider vinegar
Juice of 1 lime
Pinch of sea salt.

METHOD
Start by washing the kale.
Next, tear small pieces off the stems, discarding the stems and placing the leaves into a bowl.
Drizzle all the dressing ingredients onto the kale and use your hands to firmly start massaging it all into the leaves, as you do this you’ll feel the leaves soften and wilt. Keep massaging them for a few minutes to make sure they are really soft.
Stir through the pomegranate seeds, pumpkin seeds and avocado cubes before enjoying.
