Method
Slice the aubergines in half, length ways, place in a roasting tin, skin side down and criss cross the flesh. Brush with olive oil, season with salt and pepper, and add some crushed garlic to each one. (Up to a clove in total, depending on your taste.)
Roast at 200 degrees c fan, for approximately 40 minutes, until soft and caramelised.
Finely chop the herbs (reserving a small handful of mint leaves for garnish), and add to the yoghurt along with the lemon juice, a clove of crushed garlic, and season with salt and pepper to taste.
Once cooked, serve the aubergines onto a plate, pour over the yoghurt, and garnish with torn mint leaves and pomegranate seeds.
