Roasted aubergines with herb yoghurt and pomegranate seeds

Ingredients

  • 2 large aubergines
  • 300 ml of natural yoghurt
  • 2 cloves of garlic
  • bunch of coriander
  • bunch of parsley
  • small bunch of basil
  • small bunch of mint
  • Juice of half a lemon
  • Drizzle of extra virgin olive oil
  • Large tablespoon of pomegranate seeds

Here’s a simple, glow-boosting dish that’s as nourishing for your skin as it is satisfying for your taste buds: roasted aubergine with garlic & herb yoghurt, topped with jewel-like pomegranate seeds

Aubergines are rich in antioxidants that help fight skin-damaging free radicals, while Greek yoghurt delivers protein and probiotics to support a healthy gut–skin connection. Fresh herbs like basil, mint, coriander, and parsley are full of anti-inflammatory compounds that calm the skin from within, and lemon juice adds a bright hit of vitamin C to support collagen production. Garlic boosts circulation, and pomegranate seeds? A powerful burst of polyphenols that help protect and repair the skin barrier.

It’s fresh, vibrant, and secretly doing wonders for your face. Enjoy it warm or at room temperature — your skin (and taste buds) will thank you.

This makes a showstopping side dish, or a complete meal (the addition of crumbled feta works well if serving as a main meal.)

Method

  1. Slice the aubergines in half, length ways, place in a roasting tin, skin side down and criss cross the flesh. Brush with olive oil, season with salt and pepper, and add some crushed garlic to each one. (Up to a clove in total, depending on your taste.)

    Roast at 200 degrees c fan, for approximately 40 minutes, until soft and caramelised.

  2. Finely chop the herbs (reserving a small handful of mint leaves for garnish), and add to the yoghurt along with the lemon juice, a clove of crushed garlic, and season with salt and pepper to taste.

  3. Once cooked, serve the aubergines onto a plate, pour over the yoghurt, and garnish with torn mint leaves and pomegranate seeds.
