Asian Duck salad

Ingredients

  • Bag of mixed salad leaves
  • 4 spring onions, sliced on the diagonal
  • half a cucumber, slice in half, then on a diagonal
  • 5 large radishes, sliced thinly
  • bunch of coriander, some chopped, some whole
  • small bunch of mint leaves
  • 1 tbsp of rice wine vinegar
  • 1 tbsp of olive oil
  • 1 tbsp of sesame oil
  • 2 tbsp of soy
  • Juice of 2 limes
  • 1 small red chilli
  • 1 large garlic clove or 2 smaller ones
  • 1 small thumb sided piece of ginger
  • 1 desert spoon of honey
  • 2 duck legs
  • Handful of peanuts

Method

  1. Put the duck legs in a roasting dish, pat the skin dry with a paper towel, prick skin and season. Roast at 180 fan for 90 mins. Then shred the meat.

  2. Assemble all the salad ingredients (leaves, cucumber, radishes, spring onions, whole coriander leaves)

     

  3. Combine all the liquid ingredients, and whisk together with chopped chilli, and grated garlic and ginger. Dress the salad and add the shredded duck.

  4. Chop the peanuts, sprinkle over the salad along with the mint leaves and chopped coriander.
